Higos con trigo sarraceno y crema de anacardos / Figs with buckwheat and cashews cream

Feliz lunes a tod@s!Para empezar bien la semana os traigo una receta deliciosa perfecta para postre, merienda o desayuno: Higos con trigo sarraceno y crema de anacardos. La he sacado de Alkaline Sisters, en su web tienen infinidad de recetas que me encantan y siempre me inspiran porque son súper sanas y siempre están buenísimas!! Esta es mi  versión de su receta. Espero que os guste!

Happy Monday to everyone! To start on a good foot this week I bring you this delicious recipe perfect for either dessert, snack or breakfast: Figs with buckwheat and cashews cream. I’ve taken it from Alkaline Sisters, on their web I always find a huge number of recipes which inspire me a lot because they’re both healthy and mouthwatering! This is my version of their recipe. I hope you like it!
 
Ingredientes para 2 personas: (2 people)
4 o 5 higos (figs)
1 taza de trigo sarraceno (1 cup of buckwheat)
 
Para la crema: (For the cream)
1 puñadito de anacardos (A fistful of cashews)
1 limón (lemon)
 
 
Preparación:
1. Poner a remojo el trigo sarraceno durante 10 minutos aproximadamente (normalmente el trigo sarraceno se cocina, pero en este caso lo comemos crudo….ya verás lo sorprendente que es cuando lo pruebas y parece muesli!)
 
2. Cortamos los higos a trozos pequeñitos y los ponemos en el bol que se vaya a utilizar para comer. 
 
3. Para la crema necesitamos una batidora donde ponemos los anacardos y el jugo de un limón. Batimos y añadimos agua hasta que esté cremoso. 
 
4. Sacamos el trigo sarraceno del agua y lo añadimos encima de los higos. Por último, vertemos la cantidad deseada de la crema de anacardos por encima. Lo ideal es comérselo fresquito, pero al natural también está delicioso.

How to make it:
1. Soak the buckwheat for 10 minutes approximately (we’re used to cook the buckwheat but in this case we’ll eat it raw… you’ll see how surprising it is when you eat it and it looks like muesli!)
 
2. Cut the figs into small cubes and place them in your bowl.
 
3. For the cream we need a beater where we put both the cashews and the juice of 1 lemon.Beat and add water tip you see it’s creamy. 
 
4. Remove the buckwheat from the water and place it on top of the figs. The ideal moment to eat it is when it’s cold, but if not it’s delicious as well.
